They were very fresh and excellent... except one that was totally empty!!! I made 10 dishes out of them, using every part of them (muscle, coral, and mantle for a very tasty broth) and different cooking techniques: tartar, carpaccio, steamed above broth (upside down still attached on its top shell), BBQ'd on its shell and finished with flaming bacon dripping through a flambadou (old French ustensil), coral-based stuffing in squash blossoms, risotto... On top of the empty one, my "reproach" is the minimum quantity to buy. We had them 3 days in a row... but they were so good, you are forgiven ;)

NEVER HAD A SCALLOP OUT OF THE SHELL ALWAYS BOUGHT IN THE STORE FROZEN. THE FRESH ONES OUT OF THE SHELL HAVE A TOTALLY DIFFERENT TASTE AND THEY ARE AMAZING.

Scallop still attached on its shell, seared up and served with roots braised in butter and scallops mantle broth,
Scallops and wilted spinach salad,
Scallops and pineapple skewed on a vanilla bean and pan-roasted in coconut oil

Arrived all alive and quite a number U-10 size. Lovely sweet firm texture. I had some as crude with diced apple & caviar with lime, lemon and yuzu sauce. Broiled ones with garlic butter with freshly grated Parmesan.
