Joe targets Black Sea Bass, Tautog, Fluke, Bonito, Scup, and Bluefish all exclusively landed hook and line and meticulously taken care of from the moment they touch the deck.

Fish are immediately bled and placed in an ice slurry which preserves color and ensures clean firm fillets. Some of the more typical sushi fish are dispatched using the Ike Jime method which is not only the most humane method but ensures a quality that can no be surpassed.
