Although less common in retail, Ensui (wet pack), is the best way to order Uni. Uni packed dry on trays first has to be treated or washed with a preservative so it can maintain its shape and rigidity. Ensui on the other hand is organic and chemical free. So what's the liquid? It's a saltwater mixture which is made to replicate the seawater where the urchin is harvested. No chemicals at all. Using this method ensures the uni retains not only its most true flavor profile (merrior) but also allows it to maintain its natural texture and mouthfeel. It's the closest experience to shucking an urchin and eating the uni right on the water!
