Meet… Live Monterey Red Abalone.

Intertidal Cage Grown. Description: As part of a partnership with Monterey Abalone Company, we are excited to sell live 1/4lbs Monterey Abalone. To prepare - Shuck abalone foot from shell, remove organs and head, rinse in fresh water and place foot in a bowl and refrigerate for one hour. While resting in the bowl, the foot is going to produce some body fluid, juices. Do not discard. After chilling, slice foot into steaks 1/4 inch thick slices. Place steaks into a zip loc baggie and tenderize by pounding, a few good whacks over every square inch on both sides. Put tenderized steaks back into the bowl with the juices. From here you can flour and sautee, grill or poach.

Whole | Sold as 4 pieces

Up to 5 days in the refrigerator and can be frozen.

It’s been a long time since I’ve enjoyed abalone, with the last time being at a nice seafood place in Portland, Oregon forty or more years ago. Mom used to make a delicious soup with abalone slices. Those experiences were all before the prices spiked and abalone fishing became non existent for a long time on the west coast. I have wanted to try it again, to see if my earlier experiences would be validated, and they pretty much were. My memory was that abalone was good, but not all that culinarily exciting when compared to other forms of seafood. The flavor is very mild, and in order to be good it helps to add both seasonings and texture. I used the ever popular method of battering and deep frying to achieve that with my E-Fish order. The result was quite good and my wife and I enjoyed the results for dinner. Will I buy again? Although I can afford to do so, it’s not likely. For nearly $100 I got a fairly meager amount of protein for two people at a price that was rather high. I don’t begrudge the fishermen who farmed these abalone, I just don’t think abalone meat is satisfying enough to justify the current price. I can get far greater value from other seafood species. That’s exactly what I expected and I’m happy to have had the experience.

Clean today, cook tomorrow. Suggestion, especially with exotics as fresh abalone, which I haven’t cleaned or cooked in 30 years: Cleaning instructions, and a cooking recipe to be included. Just an idea.

Unfortunately I live on the North Coast of California for many years and Abalone was one of our main staples until the state decided we can no longer harvest them. I was expecting something just a little bit larger for the price. Although the medallions were very small in size approximately 2" after cleaned, they were very tasty.

Abalone ("ormeau") is called "sea truffle" in French. It says all! Abalone gently and briefly seared in light brown butter, garlic, parsley - Crushed potatoes with algae, leek fondue, apple brunoise, cider and abalone trim sauce

Saturday I Cleaned, sliced into thin medallions then tenderized. Overnight in the fridge. Smelled fresh and fine before preparing. Tonight I did a Fransese version. Dusted in seasoned flour then egg then hot pan. Cooked fast hot butter and a little bacon fat. Sprinkled a little lemon, salt. It was tender and fantastic. Glad to see successful cultivation of this exceptional mollusk. Expensive but worth the experience. I’ll treat myself again but not too soon. Unfortunately. RFC Miami
