The vast majority of sea scallops available to the public are treated by being soaked in a chemical to increase shelf-life and/or retain water to increase the product weight. These are NOT. Never treated with added chemicals and only handled by the harvester and Truefin before arriving to you. 10-20 pieces per pound. This time of year, the product is previously frozen once and will thaw out in transit to you.

I am beyond thrilled with these scallops! Texture, taste, look, everything about them is wonderful! Additionally I had a wonderful ordering experience. We had a winter storm right after I placed my order so it was delayed. Jeff personally reached out to me via text and let me know what was going on. I divided our four pounds of scallops into three packages, freezing half, making ceviche that day with one-third of the remaining half and refrigerating two-thirds of it for the next night.
Ceviche was delicious, with lime and orange juice, red onion, habañero chili, tomato and cilantro, but I think the scallops were almost too mild in a ceviche, because they didn't have a distinctive taste of their own in that piquante dish. We ate the ceviche over the next two days and loved it. On the third evening I marinated the two-thirds of a pound in coriander, ginger, grapeseed oil, and roasted seaweed and grilled the scallops on skewers, then lay them in a bed of lime-infused mayonnaise with Korean pepper flakes and chopped scallions. Absolutely fantastic. The various flavors enhanced the scallops' delicate, buttery sweetness. Accompanied by sticky rice, this was a meal made in heaven.

These Scallops were incredible. They arrive cold and fresh. We ate some raw, sliced with salt and lemon juice, yum! The rest we flash cooked in a cast iron HOT skillet and torched them a bit as well. I made a tasty fresh purée of Italian parsley, lemon juice, garlic and salt to serve with the scallops, so good. I highly recommend these scallops, the freshness is unprecedented.

Since I can’t be home with my parents for Christmas this year, I wanted to send them seafood for their annual Cajun Night Before Christmas gumbo. Let me just say, that my parents have not stopped raving about these jumbos since they arrived. These scallops are absolutely like butter! So sweet, not fishy at all, and huge! My parents may never be able to buy grocery scallops again. I think we will be ordering more of these for sure! Best Christmas present ever and such wonderful customer service. Can not recommend these enough! If you’ve been hesitant to order, DO IT!
