Meet… Chatham Oysters.

Chatham Oysters have a hard shell with gray-green and brown accents. They have rich, firm meats with a “slap you in the face” brininess followed by a sweet and mild mineral finish.

50, 100 or 200 oysters

7-10 days in refrigerator. Do not freeze.

Chatham Shellfish

Chatham Oysters start about the size of a pepper flake in the upwellers on Oyster Pond. From here the team begins to grade the seed and transition them into a rack and bag system where the team cleans, rotates and monitors growth until they're ready for harvest.

Founded in 1976, Chatham Shellfish Company has been a revitalizing force of aquaculture in the region. Revisiting techniques of old, when oyster grants lined the Oyster River and Oyster Pond, and incorporating genuinely self-made technology they've forged a successful modern day shellfish farming venture.
